To use the alkalized cocoa powder in your baking recipes, first melt the chocolate in a water bath or in the microwave at short intervals, stirring between each interval to ensure it melts evenly. You can add it to doughs for cakes, cookies or to make truffles. Make sure the temperature does not exceed 45-50 ℃ to prevent the chocolate from burning.
